Olive Oil statement

 Single Estate Extra Virgin Olive OilIt is said that you do not make Extra Virgin Olive Oil, you find it. If so Paolo Carlesi can justifiably be proud of the Extra Virgin Olive Oil he finds. He garentees that our olive oil is not only 100% Tuscan Oilve oil, it is made from 100% hand picked Il Piano olives. 

It is said that you do not make Extra Virgin Olive Oil, you find it. If so Paolo Carlesi can justifiably be proud of the Extra Virgin Olive Oil he finds. Il Piano has 2,000 odd olive trees, the varieties are Pendolino, Leccino, Frantoio and Moraiolo.

Il Piano has 1,500 odd olive trees, we have Moraolo, Leccono, Frantoio and a small amount of Pendolino. This is a very traditional Tuscan blend of varieties.

 

The olives are picked by hand from the tree, starting the end of October. Then taken down to the Frantoio (olive mill) to be pressed.

With a First, Cold press and acidity below 0.8% Paolo’s olive oil is of the highest quality. Using mostly green olives his oil is grassy, herbaceous and pungent with the peppery, picante sensation loved by the Tuscans.

The olive are tree picked i.e. picked by hand from the tree, starting in November. Then taken down to the Frantoio to be pressed. Olive Oil is the only cooking oil made without the use of chemicals or industrial refining.

Extra Virgin Olive Oil is essentially oil “fresh squeezed” from the fresh fruit of the olive tree. Without alteration of the colour, taste and nutrients or vitamins. EVOO is the only oil made without the use of chemicals or industrial refining.

It must be the first time the olive are pressed, they must be cold pressed i.e. below 80F 26C but the cooler the better, and a maximum acidity of 0.8% although the lower the better quality the oil will be.
